Ingredients:

3/4 cup molasses
1/4 cup honey
1/2 cup margarine
1/4 cup shortening
2 eggs
4 cups all-purpose flour
3/4 cup dark brown sugar
1/2 cup granulated white sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/2 teaspoon ground cinnamon
1 teaspoon ground cardamom
1 teaspoon ground ginger
1 teaspoon ground white pepper
1 teaspoon ground anise seeds
1/2 teaspoon allspice
1/2 teaspoon ground cloves
1/2 teaspoon nutmeg
1/2 teaspoon salt
Approximately 1 cup powdered sugar to use for dusting

Preparation:

In a small saucepan, over medium-low heat melt margarine and shortening. Add the molasses and honey. Continue to cook and stir until mixture is heated through and well blended. Turn off heat and allow mixture to cool completely. Stir the eggs into the cooled liquid mixture.

Combine flour, baking powder, baking soda and spices in a large mixing bowl. Mix well to ensure distribution of spices. Stir the cooled liquid mixture into the dry ingredients. Mix until well combined. Place cookie dough into refrigerator and chill about 2 hours.

Grease cookie sheets and set aside. Preheat the oven to 325 degrees F (165 degrees C). Roll chilled dough into 3/4″ sized balls. Arrange the balls on prepared cookie sheets keeping placement 1″ apart so they will not run together when baking.

Place cookie sheets into preheated oven and bake 10 to 15 minutes or until tops are golden brown. Move the cookies onto racks to cool using a spatula.

When cookies are completely cool, put the powdered sugar into a zip-top type plastic bag. Add a few cookies at a time to the powdered sugar. Shake slightly to entirely dust the cookies with a light coating. Remove cookies from bag and store in air-tight containers.

This recipe yields approximately 5 to 6 dozen cookies.
